COMPOSITION: 56% Cabernet Sauvignon, Pepper Bridge and McClellan Vineyards
38% Merlot, Seven Hills Vineyard
6% Cabernet Franc, Watermill Estate Vineyard
TECHNICAL NOTES: pH – 3.72 • TA – 0.58 g/100mL • Alcohol – 14.1%
FERMENTATION: Small open top stainless steel tanks. The cap was punched down three
times per day. Free run juice was transferred to French oak barrels to
complete fermentation.
BARREL AGING: 100% French oak barrels
60% New oak
Aged 17 months

RELEASE DATE: April 1, 2010
It’s our 9th release of this Walla Walla Valley Bordeaux-style blend. I have
said many times before, that if I could make only one wine this would be
the one. The 2008 may go down as my favorite bottling of Une Vallée since
our first release of this wine. Only time will tell…but I have a feeling this
